Summary

The MycoSense project aims to develop an innovative, multimodal system for the detection of mycotoxins and mycotoxicogenic mould contamination in food. Using a combination of artificial intelligence, machine vision and food sensor properties, the possibilities of rapid, non-invasive and automated identification of contaminated samples will be explored. The project will involve the collection of visual and microbiological data from various food matrices (e.g. cereals, nuts, grapes, wine, beer), processing of these data using advanced algorithms and validation of the results in laboratory conditions. Special emphasis will be placed on the integration of hyperspectral imaging, microbiological contamination with known mycotoxin producers (such as Alternaria alternata, Aspergillus flavus, Fusarium graminearum, Fusarium verticillioides, Penicilium expansum) and AI models for contamination classification and prediction. A prototype system will be developed that will enable early risk detection, reduce losses in production or processing and increase the efficiency of quality control by increasing the speed of analysis and using non-destructive methods that can be checked with classical ones. The expected results include creating a foundation for the application of smart technologies in the food industry, which contributes to increasing food safety, protecting consumer health and strengthening the competitiveness of the food sector in accordance with the principles of sustainability and digital transformation.
